African Burgers
100g Coconut Flakes or Desiccated Coconut
500g Mixed Mince
1 Onion
1 Garlic clove
1 Tbs. of Vegetable or Maize oil
1 Egg
Clear stock
Pepper
Salt
Oil to Brush Burgers.
Soak the coconut in the hot clear soup and let them swell up for 2 - 3 minutes. Pour off the clear soup and press out the excess liquid from the coconut . Peel both the onion and the garlic clove then chop finely and fry in oil till the onions are transparent and then add them to the coconut . Add the mince and egg and mix thoroughly. Add salt and pepper to taste and then form 4 equal sized burgers using your hands. Using a pastry brush, brush the burgers with oil and let them grill on the barbecue for 10 minutes each side, turning frequently. Then ........ enjoy, and to hell with the diet.
